Cooking eggs over high heat can cause ribbons to form different texture. If you don't scramble them apparently you can make [URL="https://www.youtube.com/watch?v=1uXi8BE7Wo0"]tornado omelets [/URL]. Scrambling eggs over low heat, and especially if you add cream can produce a pudding texture. I scramble high if I somehow feel adventurous.
