How do you host ur own game?

I went to create private game hoping to find an option to 'Open to Public'
but was very surprised not to find one.

How if even possible do you host ur own game?

To create a public lobby:

Go to "Open Games"

If you see Mafia, wait a minute or two.

Try to join. The lobby will be full and you will not join.

You will then get the option to create your own lobby. It will be public.

I agree 100%, I mean there was nothing wrong with the "Open to Public" button in the first place but with the new U.I they thought it would either be not needed or forgot, something stupid like that.
